Fried Tilapia w/ hush puppies

I decided i was in the mood for Tilapia tonight. So here goes...



Alright, this is quite a simple recipe. I am using Zatarain's fish fry, we can come up with a home made fish fry in the future if we can agree on a really good one, and the hush puppies are a mix, but I'm spicing them up with diced onions.

Alright, the Tilapia, it is frozen on the ship shortly after being caught and cut into fillets. I have no problem using it, and each individual piece is vacuum packed, the flash frozen. Now, obviously, the preference is for it to be American caught. And first, you cut each individual fillet in half, you can cut it into smaller strips if you want to do your own fish sticks, but the small fillets are pretty good too.



After you have all of the fillets cut, let them rest for a minute in the air...




The egg wash is simply a few eggs (I used 4) and milk.


Then, into the fish fry



Coat it well, and wait about 5 minutes, this allows the coating to stick to it better



And, into the hot oil, I love frying food, it's not the best for the waistline, so I don't do it often, but it's always a treat.




Make sure to turn it, then when it's floating, and golden brown, take it out, and put it on a plate with a paper towel to drain the excess oil.


You are going to need the oil for the hush puppies, so load all the fish onto a pan, and throw it in the oven on warm.



For the hush puppies, dice the onion, and then add it to the mix.



The mix calls for either milk or water, I prefer milk.



Follow the instructions, after you mix it, you let it rest for 5 minutes. I would prefer to use the melon baller that's like the little ice cream scoop, but I don't have one right now, so I found out that I pull it out with one spoon, and scrape it into the oil with a second spoon, it worked pretty good, but the hush puppies came out quite large, but that's NOT a bad thing, lol.



Don't overcook them!!! Since I didn't put too much oil in, I had to flip them through the cooking process, and then take them out of the oil...



Pull the fish out of the oven, plate it, and I added green beans (french style), and home made tartar sauce.




And it turned out AWESOME!!!

1 package (2 lbs) tilapia fillets.
Zatarain's fish fry
Martha White Hush Puppy mix (2 packages, trust me you want two packs to feed a family of 4)
one onion
frying oil too, don't forget.

What a beautiful post! You are certainly making some awesome food lately Aaron Thumbs Up The look of those filets after frying is perfect, and can almost imagine how nice it is to sink my teeth into crispy crunchy flaky fish filets!

They turned out tasting awesome. And the tarter sauce was really easy too, some relish, mayo, and a smidge of ketchup, and it tasted great!!!

I'm still thinking what I want to make for dinner tomorrow.
