Recipe Frijoles de Olla
![]() 1 pound dried Pinto or Red Alubia Small Beans
1 twelve ounce bottle of Mexican black beer
1 cup finely chopped spring onion
1 cup finely chopped scallion
1 cup finely chopped red onion
5 cups water
Pancetta ( pork bacon or turkey bacon if preferred ) sliced and cut into 1/4 inch chunks
4 garlic cloves minced
1 Jalapeño seeded and chopped finely
1 tsp. minced chipotle
1/2 cup crumbled Cotija cheese from Mexico
1/2 cup diced Monterrey Jack or Oaxaca cheese
1/2 cup seeded ripe red tomatoes
1/4 cup freshly chopped cilantro ( * parsley or ezpate )
salt and freshly ground blk pepper
1 dried red chili pepper sprinkled
*** brown sugar - a pinch or two
1) soak the dried beans overnight in salted water
2) the next morning: rinse the beans and put 5 cups cold water in a large stock pot, and bring to simmer.
3) add the Pinto Beans or Alubias red small beans
4) Add the black beer
5) sauté the onions, garlic, pancetta, tomato, chilies and then strain / drain Evoo or Corn Oil and add to the bean pot
6) Now, sauté 4 Spanish sausages or 4 Mexican; strain and drain pork sausage oil and add to the Bean Pot ( one can use turkey sausage if watching cholesterol or do not pork products ). At two hours time
7) simmer 1/2 hour longer until beans tender and the liquid is reduced
8) stir occasionally very carefully not to break the beans or sausage
9) season with salt and pepper and take 10 tblsps of the beans and put in blender
10) add back to bean pot, to thicken sauce
*** serve with savoury warm corn bread or corn tortillas and black beer or Rosé chilled wine from Spain or Chile.
*** garnish with: guacamole or avocado slices and / or sour cream
