Gaeng Garee Gai
Yellow Chicken Curry

Ingredients:

1 pound chicken or beef
2 tablespoons yellow curry paste
5 small mun tet, peeled and partly boiled.
3 cups coconut milk (click here for information on selecting and using coconuts)
2 tbsp.shallots
1 tsp. sea salt
4.tbsp vegetable oil

Method:

1. Cut meat into 2 inch thick pieces (chicken) or slices (beef).
2. fry the shallots in vegetable oil until crispy and set aside
3. in a wok, fry the spice mixture in 2 tbsp. of the oil used for frying the shallots
4. add the coconut cream in small amounts.
5. add the chicken and cook without stirring.
6. Add the coconut milk and salt. Cook until the meat is tender
7. add the potatoes, and simmer for a further 30 minutes
8. Remove from heat when done
9. Pour into serving bowl, and sprinkle with the fried shallots.
