The San Simon da Costa D.A., Lugo, Galicia, Spain protects this smoked cow variety cheese which is heaven on earth and is luscious in a grilled cheese, cheese platter or fondue.
 
This cheese is made from Alpine brown breed cows and The Blonde Rubia Cow of Galicia.
 
The milk is full cream and is matured for 60 days and then smoked in Birch wood.
 
This cheese is produced in Lugo, Galicia in the following villages: Villalba, Lugo, Muras, A Balsa and O Viveir贸.
 
The cheese resembles a spinning top or bullet which is incased in a deep gold rind with a deep golden yellow cheese. The cheese is semi soft, with a firm consistency. The flavour is absolutely incredible with a noticeable aroma of smoke.
 
Tasting Notes:  A soft buttery and smokey taste which is very agreeable with a slight taste and aroma of dried fruits and nuts and a hint of piquant.
 
Uses:
 
Grilled cheese sandwiches
A Chef salad
Fondue
Dried fruits and nuts with San Sim贸n as a snack 
With cheese platter assortment
