There are more cookbooks on this planet than people ... However, there a very few Spanish cookbooks that are authentic, traditional and written by Spaniards. 

Here are a few that shall be most appreciated not only for their recipes, however, for their history and the true inside story behind these varying dishes, that make up the melting pot of Iberia ...
