Well I have been on a cooking spree since I am out of school for a month and home from Oklahoma. Not to mention it's about -25 or so outside. Last nights go at Paul Purdhomme's Idaho potato cake made me decide to whip up a nice breakfast today.

A quick unknown history fact about Quiche is it's origins come from Germany not france. I didn't know that until I did a quick google search this morning. That was interesting to me. Now back to the dish.

I took a kielbasa, .5 onion, handful of mushrooms and cut them up. Any way you want is fine. Started the sausage first then quickly threw in the onions, and the mushrooms soon followed (probably 5 minutes).

Half way through I decided some small cubed potatoes would make a nice addition so I cut some up and started them in a little bacon grease. At the end I threw in two small cans of diced green chiles and seasoned it all with slap your mama cajun seasoning.

Next I added the potatoes together with the main concision and put all in 2  already made pie crusts.

Next I mixed 6 eggs and about 3/4 cup of heavy cream together till frothy, then some coolly jack cheese and shredded mozzarella. Not to much but just a little. Poured this mixture over the quiche filling. And topped with a little more cheese.

Into the oven for about 25-30 minutes at 350 and this is what comes out.

Sliced up and ready to dig in.

Thanks for looking and I'm not sure why we don't make these more often because they are great ! Oh a side note try smoking them I have in the past and the taste is GREAT !

now there's an outstanding quiche! i've been telling my boys that, as men, they need to at LEAST learn how to cook three breakfasts: tyipical bacon/eggs/hashbrowns/toast, biscuits and gravy - and a quiche. if they can d o those three, they should be able to get along in life and also impress any in-laws on a sunday morning.

very nice, jerod!

You're killing me here, Jerod.  That look so good!  I would dive into that headfirst with nothing but a fork to eat my way out with!
