Let me know what you guys think of this bad boy... was last nights entry and please dont mind the bla bla jargin... i am not that pretentious its just my blog talk spiel.... anyway let me know what you guys think... if your trying this whack in some walnuts steeped in stock syrup... onto non stick surface oven or deep fry to get candied walnuts....
 
 
 
 
Q: Ehm... did you not do something like this yesterday... yawn... yawn
A: Yes... and no... they are both salads... it is summer.. and i was trying to give easy to do, visually stunning, bang factor summer on a plate... stop yawning...
 
So trust me... the last thing i am is repetitive in my kitchen... and likewise with my rockstar recipes. It is summer and i was just banging out a few simple summery salads.. for me thats what summers all about.. glass of vino... crunchy salads fresh fruits. Bang... More masterchef updates in the morrow... also more banging recipes


Ingredients
300g cooked beetroot
200g log firm goat's cheese … am going Ardsdallagh, because am Irish, because its quality… why else?
4 handfuls small-leaf salad, rocket or sorrel even, red stalk would work visual wonders here, herbs, micro herbs even, coriander works…

FOR THE DRESSING (lazy part)
1 garlic clove , crushed
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp clear honey
4 tbsp walnut oil

How to
Thinly slice the beetroot, either with a very sharp knife or on a mandolin. I prefer the old kitchen guillotine myself… for consistency, for evenness. Arrange slices around your plate or bowl, slightly overlaping.

Oh and wear gloves if you don’t want pinked up pinkees….

Put all the dressing ingredients into a jar… piping tube.. mixing bowl and give a darn good shake, whisk or blend….. Drizzle a little over the beetroot... don’t destroy your salad think refined… we can leave the rest on the table… adds to the spectacle

Slice the goat's cheese into 1inch slices and put 3 of these puppies on top of each serving of beetroot. Coming together… read on

Toss the salad leaves in a little dressing, then put a small pile of leaves on top of each serving of cheese.

Shissle my drizzle with a little more dressing… bang!

So simple… so stunning... so summer…. My summer solstice salad… Done…


Footnote to the aforementioned
Hmn… those of you keeping an eye on my earlier posts, as in yesterday’s post more specifically, may have noticed I used a honey and mustard dressing in my sweet salmon salad… well I’ll be honest I had surplus to requirements of the sauce in my fridge and in my waste not want not mentality I decided to incorporate in tonight’s, simple, summer, salad…. What’s that I hear murmur’s of… lazy!?
*Scratching head… he replies yeah but they are smoking salads, easy to do and great pics, and healthy summertime and suunshine has been the mindframe… Well we will be back tomorrow eve with a bad ass attitude recipe and my next masterchef instalment… day one… game face on… rock out….. see you then

i like the salad, barry ~ looks good and is certainly spot-on for this time of year. i also liked the use (or perhaps i should say re-use) of the honey-mustard dressing, which showed some versatility for two dishes that can work together or stand alone very well.

no i didnt really do this... t'would be a bridge to far... checking out other stuff some really interesting stuff

no worries, barry - if our brains worked at 100% all the time we wouldn't be human, would we? Wink
 
glad to see you checking things out in the forum. we pretty much run the whole spectrum depending on our interests. for myself, i usually gravitate toward the historical or peasant dishes of europe, but i'll try almost anything once!

Looks like a wonderful salad to me Barry....beets are one of the most underused vegetables in my opinion, and I love them any way they are prepared.

Also... raw beets... pickling them yourself... white wine vinegar... sugar.. olive oil.. star anisee.. bay leaf... bang... such flavour..beats supermarket jarred beets anydayWink
