this is a raw seafood dish that has been marinated for anywhere from a few minutes to hours. Pick your seafood whether it be halibut, shrimp, grouper etc. just make sure is is high quality
2# fresh seafood or fish 4 large roma tomatoes - diced 1 cup fresh lime juice 1 - 12 oz can mexican beer 1 - lg red onion diced fine 2 cloves minced fresh garlic 4 large jalapeno petters seeded and minced 4 large chipolte peppers canned, seeded drained and chopped 1 can tomato juice 2 large red peppers roasted seeded and diced red and green tobasco to your taste 3 large avocado, ripe, diced for garnish on top when served EVOO 1 cup 1/4 cup cilantro fresh, chopped added just before serving at least an hour before serving toss all the ingredients together in a large mixing bowl and add salt/pepper to your taste serve in a large bowl with a bed of iceberg lettuce and tortilla chips for dipping can the marinate for 1-8 hours before serving |
