Despite the leveling effects of television and tourism, there are still many dishes unique to a region.
 
So it is with this dish. I first learned about it at a duck hunting camp in Arkansas. Through the years I've both served it, and talked it up. Everybody in the Midwest seems to know about it. But once you move east and west, nobody's ever heard about it. In fact, many stick up their noses at the combination of ingredients. Until they taste the finished result.
 
Pineapple Cheese Casserole
 
2 cans pineapple chunks
3 tbls pineapple juice
3 tbls flour
3/4 cup sugar
1 cup grated cheddar
1 cup cracker crumbs
1 stiick butter, melted
 
Drain pineapple, reserving juice.
 
Combine pineapple, juice, flour and sugar in a baking pan. Sprnikle with the cheese.
 
Cover with a topping made by combining the crumbs with the melted butter.
 
Bake at 350F for 30 minutes.
 
Can be served hot, cold, or at room temperature. Which, among other things, makes it a perfect pot-luck dish.

I've been meaning to try this, but keep forgetting. The interesting thing is that I use something similar to top hams that I do in the oven; it's made from crushed pineapple, stale bread cubes, grated swiss cheese and mustard. I stir it into a mixture and tehn slap it on the ham, where it bakes into a really, really flavourful crust - but often, I make more than I need, and simply put the surplus in a baking dish and serve it alongside the ham, much like stuffing or dressing is served alongside turkey.

Yep, never heard of such a thing over here on the left coast. I love pineapple, and I love cheese, but the thought of them together is something I'm having a hard time getting my brain to accept.

But maybe one of these days I'll try it just to see.

That's almost everyone's reaction, Mike. The combination just doesn't sound right. Until they try it. It's actually quite delicious, and I urge you to give it a go.
