I confess it! I’m a gadget freak. If there was a 12 step program for gadgetaholics, I’d be testifying every night.

But there are good gadgets and godawful gadgets. So I was wondering, what would you choose as the one best gadget in your kitchen and the one worst of the bunch? Finally, is there a gadget that intrigued you, but which you never acquired, and wish you had done so?

For me, a good gadget is one that makes a kitchen task easier, faster, or more efficient. It literally should be an extension of my hand. A bad gadget is one that makes the job harder, rather than easier, or which brings nothing to the table by way of extra efficiency.

The worst gadget in this house, bar none, is the shrimp peeler Friend Wife insisted on. This is a molded plastic device with a knife-like handle, and a long, slightly curved, tine. The tine is about six inches long.

The idea is that you push the tine into a shrimp, and it simultaneously peels and deveins the critter.

Um, huh! I have to admit, it sort of works, if you don’t mind wrestling the peel off the shrimp. But I can do the job faster just by hand, or, if I need a tool, a long-tined fork is a lot less awkward, and doesn’t break as many shrimp in the process.

There is a second place, also one that Friend Wife bought. This is a gadget for slicing avocados. Basically, it’s a net of wires, supported in a ovoid frame. Mechanically, it “cuts” the way a cheese wire does.

But picture this. You start by cutting around the avocado with a knife, to separate the halves and pull the seed. Then you put the knife down, pick up the gadget, and with a push-down and pull towards you motion, cut the fruit into nice even slices---that is, providing you’ve managed to use the skin as a guide for the gadget’s frame, and that the gadget doesn’t twist in your hand as it’s prone to do. And while you’re doing that, without putting my knife down, I’ll have completed at least two avocados.

Who dreams these things up? Surely nobody whose ever worked in a real kitchen.

As to the wish I’d gotten one gadget: years ago I read a British cooking magazine. One of the recipes was for mushrooms baked in a lattice-like pastry cage. Apparently, there was available in England a gadget that let you cut the dough so it would open up into that sort of net. I searched all over for one, but, apparently, they weren’t being imported to the U.S.

What about the good gadgets? This is the hard one. There are so many great gadgets it’s difficult to choose just one. But, if I had to, I would award the honor of best to the microplane. There is no other tool or gadget I know of that does the job as well, as quickly, or as efficiently. And the ironic thing, of course, is that is wasn’t designed to be a kitchen gadget in the first place.

great post, brook ~ and regarding your general comments, i couldn't have said it better myself.
 
i'll start with "wish-i-had" gadgets: the first is one i had before and let slip from my fingers: the mouli-jullienne:
 
 
hopefully, i'll get another one SOON ~
 
the second was one that my great grandfather had, it was one of those rotary potato-apple peelers that i am sure msot people are familiar with. i lvoed the thing and it is one of my memories with him. the oens that you find nowadays are too expensive or cheap, flimsy plastic, but sooner or alter i will get one.
 
another one that i kind of liked was a gadget that was like two flat-bottomed tupperware bowls, placed mouth-to-mouth, separated by a plastic disk with holes in it. the idea was that you could use it to quickly dredge chunks of meat in flour, or other similar tasks. we got one, and i use it now and then.
 
as for completely awful, there are so many out there i can't keep track. i love strolling through the "kitchen gadget" aisle, but rarely actually buy anything, except the old stand-bys: good measuring spoons, cups etc. the useless stuff i jsut kind of glaze over ~ but one thing i will say is that a "gadget," to be good should for the most aprt NOT be a "single-purpose" white elephant that will just sit on the corner on your counter or, worse yet, be consigned to that sorry space next to the cleaners or wastebasket that is languishing away in the dungeon under the sink.

Gadget good:

This is a black and white photo of this red and black silicone spatula knife. It has about  6" blade and it is one of the handiest tools in the kitchen. It won't cut real hard things but it scrapes, spreads, stirs and it's a good spatula for most things. I like it and I use it alot. In fact, when I found them for $2.99 each, I bought 2 more.

Gadget bad:

This thing just wasn't worth the effort. It couldn't reliably peel an egg. I used to make pickled eggs 5 dozen at a time and I thought his might speed things up. No go. Don't bother.

Can't say as I agree with you about multi-purpose, Ron. Many, probably most, gadgets are single-purpose; that's the whole idea---that if they are designed and built properly they do one job better than any other tool.  For instance, have you seen the thingies used to cut mangos off their pits. It's a slick little gizmo that does the job it was designed for. There's not another thing in the world it can do. But it does that job better than I can do it with one of my knives---so meets my criteria for being a good gadget.
 
Frankly, the whole stampede towards multi-purpose tools, led by Alton Brown (who contradicts himself on that issue at the drop of a sponsor), leaves me cold. The problem with multi-task tools is that too often they don't do any of the jobs real well. Ask any woodworker if, given a free choice, he'd opt for multi-purpose tools or individual, stationary tools. Good woodworkers opt for the individual tools every time. Why should cooks be any different?
 
Rod, is that what that thing is; an egg peeler? I've never seen one before. How is it supposed to work?

Here's my vote for one of the best time savers in my kitchen...it saves a lot of clean up time. Just a clip on spoon rest.

I also use my bench scraper a great deal...on a daily basis, or multiple times daily. The worst gadget I ever recieved was one of those clamshell looking things with slots in it to help you make perfect tomato slices? Hell, I could slice three tomatoes while you're trying to get one postitioned right in the damned thing.

HF, it is an egg peeler. Referring to the picture in my previous post, you'll notice the corrugated cylinder which is a bellows that just sets on top of the base. The base, where you can't see it, has an orifice made of a soft rubber.

To use the thing, the bellows is set aside for a moment, then the hard boiled egg has it's shell cracked by the user prior to placing it small end down on top of the orifice. Then the corrugated bellows is placed on top and it is pressed sharply downward, creating the seal between the bellows and the base and the eggshell and the rubber orifice. The pressure thus created forces the egg out the bottom, the shell having been wiped off the egg on it's way through.

This soft rubber orifice idea is based on machinery that is used in the industry to do the same job. Of course in industry they have all parts of the process dialed in. This thing is a device that needs to be mastered I guess, as small variables in procedure would give a poor result. I could only get maybe 4 eggs out of 12 that would exit this thing without some issue.

My mom had one of those avocado slicers. I think we used it once before going to Goodwill.

I'm pretty low on gadgets. For the longest time I made do with whatever I had on hand (fork...chopstick...knife...) so I'm used to it. I do get enamored with gadgets but then start thinking about cabinet/drawer space! I inherited my great grandmothers and grandmothers kitchen sets so I've had to be ruthless about the things I keep...and then of course we remodeled and now my kitchen is nearly 3 times the size!

Tas, I have one of those old fashioned apple peelers, made of all metal. I used it ONCE during canning. I do plan on using it again but just haven't had the chance!

Rod, I bet the egg peeler would be a nightmare with my eggs. I did actually think about getting one when we were going to pickle a bunch of eggs, but our hens don't lay uniform sizes!

Hmmm...I guess my pasta machine is the most useful gadget I have. Used it 2 or 3 times a week during Italian month!

My least useful one right now is my crappy mandoline. A good mandoline is an awesome tool - we have one at the farm (that's where I do a lot of canning, so it's nice to be able to fast prep a TON of food). I hated the $100+ price tag on the thing so when I saw one for $20 at some kitchen store, I pounced. Well, wasted $20. The setting won't 'stay' (it increases with each stroke) and food constantly gets stuck instead of falling under the blade.

say, broook, you do make some good points there, and i can't really argue with them. my issue with "single use" gadgets" has a lot to do with space in our kitchen, which is smaller than some closets in some modest, middle-class homes. once you account for this sink, stove and refrigerator, there isn't much left ~
 
when it comes to truly-useful gadgets that are good at what they do, and would be used often in my kitchen, i definitely have no qualms about getting them ~

Don't talk to me about lack of space, Ron.
 
My entire usable work counter measures 18 by 21 inches. What little other counter space I have supports things like jars of spice mixes, grains, etc. Space is so tight, in fact, that I cannot use the back burners on my stove, most of the time, because there's no space to put the pot handles.
 
My stand mixer (the Pro-6, which ain't persacatically lightweight), food processor, and blender are kept on top of the fridge until needed. Etc.
 
My point is, I know what it's like to work in tight quarters. Which accounts, in part, to my feelings about gadgets that do not do what they're supposed to. I don't have a junk drawer where they can reside. If they don't do the job they go to Goodwill.

I only occasionally do prep in the living room, cuz I'm not comfortable working sitting down. Friend Wife, on the other hand, does virtually all her prep work sitting in a living room chair, with a cutting board on a TV table.
 
Basically, whatever works for you is the right way of doing something.

Many Christmases ago someone bought us a pizza oven which, even though we do not eat that much pizza, we are surprisingly attached to.  I was actually wondering why it seemed so much better until last night.  I picked up a frozen pizza since I was getting home late and my wife was working later but it was a square one and I had to use the regular oven.  By the time the oven had warmed up to 400F the little pizza oven would have almost been done and the pizza would have been better toasted.



Another little gadget that I am never without is my P-38:



The least used gadget is a milkshake machine.  It was used once and there nothing that it does any better than a blender besides wasting space.
