Banana's Foster is one of the iconic desserts of New Orleans.
My first exposure to it was at Brennens, where the dish originated. A week later I was in Clearwater, Florida, where it was on the menu. I ordered it, and mentioned to the server that they had their work cut out for them, because I'd just had it where it all started. The guy actually sneered, saying "Brennens doesn't know how to make Bananas Foster."
Say what!
At any rate, there were a couple of modifications in the Florida version, including mashing in half a canned peach.
I combined both approaches, and we developed a family tradition of serving it every New Year's Eve. When my niece was young, however, she couldn't get her mouth around "Bananas Foster," and it came out "Banana Frosties." So that's what they are.
I don't have ingredient amounts to share, cuz I always eyeball it. But the approach is what counts. You can adjust quantities to taste.
Banana Frosties
1 banana for each person, halved
1/2 canned peach half per person
About equal amounts of butter and brown sugar
Dark rum to taste
1 scoop vanilla ice cream per person
Melt the butter and brown sugar in a large skillet. Lay the bananas in the skillet and mash them with a fork. Add the peach halves and mash them.
Stir the fruits and syrup until well mixed. Stir in the rum and ignite. Ladle the flaming mixture over the ice cream. Serve.
For a change of pace, this can be made with cherry brandy instead of the rum.

sounds really nice ~ banana's foster is probably one of my favourite things; mind you, i've never had the "Real thing," but the facsimiles i've had have been delicous ~
this one looks easy and worth trying - if i do, i'll get a picture!

Oo, I'd love to make this at home! I've had it at Brennan's too (I lived in NOLA for a year) but have never bothered to make it at home. The peaches sound like a great addition!

They add just enough of a flavor note that you recognize the taste but can't quite place it.
I was reluctant, at first, to use canned peaches. But they work just fine.
