As some of you are aware, my garden has gone crazy this year.  I can't seem to control the output from my two zucchini plants so as of late I've been trying to eat zucchini as much as possible.  So last night I decided to just throw something together real quick as I'm getting tired of eating steamed veggies every other night.

Here is what I did.

Grocery store bought 3 cheese tortellini, boiled and ready to serve.

Cut up 1 red bell pepper from garden
Cut up 1 huge zucchini from garden
Fresh Oregano 
Fresh Basil
dash of Olive Oil
Lemon Juice

Brought oil up to temp, threw in the spices, and the veggies, and coated with lemon juice, cooked on high for about 3 minutes, then turned off heat and covered to let steam.

Tortellini went from colander into pot that I boiled it in and so did 1/2 stick of butter (real butter, I don't use margarine) melted butter, salted to with garlic salt, and ground fresh pepper.  While that butter was melting I shredded a left over block of Asiago Cheese that I had and then I mixed in the Veggies to the Pasta and then served in bowls topped with the shredded asiago.

Wife and I both went back for seconds and considering it took 20 minutes...start to finish on this.  It's a keeper for sure.
 


Common sense is not all that common.
