Buon Giorno,
This classic Greek dish is fragrant and aromatic chockful of lemon marmalade, fresh thyme and vanilla ... It is versatile and enjoyable ... And yes, it is easy to prepare ...
![]() Greek Chicken with Lemon Marmalade and Sautéed Potatoes
4 chicken breasts bone in
3 tablesp. Extra virgin olive oil
salt and freshly ground black pepper to taste
lemon marmalade 1/2 cup ( can use home made or jarred ) * I use home made Lemon Curd
vanilla extract 1/2 teaspoon
* sautéed potatoes - 1/2 kilo
6 Roasted Chicken wings
3 onions finely chopped ( I use 1 spring onion, 2 shallots and 1 leek )
3 whole garlic heads
6 thyme sprigs fresh herb
2 bay leaves
3 carrots diced finely
1 tblsp. lemon marmalade
1. simmer the roasted chicken wings, onions, garlic, thyme, bay leaves, and carrots for 3 hours to make a stock
2. strain and place the stock back on stovetop and add one tablespoon of lemon marmalade and reduce to 250 Ml. and witha consistency of a syrup
3. brush the breasts with Evoo, salt and blk. pepper
4. grill under broiler
5. mix the marmalade with the vanilla extract and brush over the chicken breasts
6. continue broiling until the coating carmelizes and the chicken is cooked through
7. serve with sautéed baby potatoes, White or Rosé sparkling Wine
and warm Pita ... GARNISH WITH A QUARTER SLICE OF FRESH LEMON AND FRESH THYME
Yields: 4 servings

Tas and Ahron, Firstly, thank you for your lovely compliments ...
This dish is a classic Greek citrus producing area dish ... it is simple, fragrant, aromatic, elegant and yet so simple to prepare ... and looks beautiful plated ...
One of the things I love most about the southeastern Mediterranean is the aromas of the ripening fruit, and especially the citrus varieties ... Lemon and orange ... Heavenly ...
The subtle perfume of the vanilla is lovely too and one can use vanilla bean instead of extract. I happened to be out of it ...
