During a business trip, my daughter had gone to Cyprus and this was one of the dishes she had on the island. She had given it to me to try ... The aromas are absolutely delightful ...
 
CLASSIC CYPRUS CHICKEN STIFADO ( STEW ) ... Smile
 
This dish comes from the island of Cyprus, which is located very close to Turkey and Syria, in the Mediterranean Sea.
 
*** Stifado means Stew.
 
FOR THE MARINADE ... 
500 ml. dry red wine
2 bay leaves
8 allspice berries
1 cinammon stick
 
FOR THE STEW ...
1 Whole Chicken
250 ml. extra virgin olive oil
salt to taste
freshly grounded black pepper to taste
1 kilo of small boiling onions
all purpose flour for dredging
1 Orange
500 ml. dry red wine of choice
1 cup tomato concasse
2 bay leaves
1 cinammon stick  
 
*** yields: 4 large portions
 
1. wash the chicken and pat dry
2. cut into serving portions and place in a large bowl with the red wine, bay leaves, allspice berries, and cinammon stick
3. cover and marinate for 5 to 6 hours
4. in a wide heavy pot, heat 125 ml. Evoo over medium heat
5. add the onions and reduce heat to very low, and cook until browned and translucent about 20 mins.
6. remove with slotted spoon and remove the chicken parts from the Marinade
7. pat the chicken parts dry and dredge lightly in flour, shaking off excess flour
8. discard the marinade
9. add the remaining Evoo to the pot and heat
10. sear the chicken parts, on all sides, and place the onions with orange wedges over the chicken parts
11. pour in the red wine and the tomatoes and add the bay leaves, cinammon stick, salt to taste and black freshly ground pepper
12. reduce the heat to low and simmer, covered until the chicken is tender and done inside
approximately 55 to 60 Minutes.
13. remove from the heat and let cool slightly, remove bay leaves and serve ...
