16 Bean Soup

Well folks, it's about 5:15 Sunday afternoon and I'm off-gassing like an icy comet heading straight into the center of the sun.
 
I guess the reason for that is the fact that i decided to make 16 bean soup yesterday. Yep. not happy with one little fart....gotta blow my insides to smithereens with all this other stuff. Well, if I'm gonna die anyway...might as well give you the recipe.
We start with some nice multicolored beans and give them an overnight soak.
 
1 Lb 16 bean mix
1 lb ham hocks
1 lb chourizo, diced
1 large onion, diced
2 Tbsp oil
1 16oz can stewed tomatoes
1 Tbsp lemon juice
1 Tbsp chili powder
1 Tbsp herbs de provence
2 chicken boullion cubes, or equivalent amount of  chicken base
3 bay leaves
salt
pepper
water
 
Cover bean mix with 2 qts water and soak overnight.
Drain beans, and saute' onions in Dutch oven in the oil.
add beans, bay leaves and  ham hocks and cover with 2 qts water.
bring to a boil, reduce to simmer and cook 90 minutes.
Remove ham hocks, let cool and pick meat off, then return to pot.
add chourizo, lemon juice, tomatoes and chili powder.
season with salt and pepper and simmer 30 minutes more, or until desired thickness is obtained.
 
Then we saute' some onions, add some ham hocks and hard dry cured sausage, and put it back on the fire.
 
Simmer for a couple hours with a few morre ingredients (to be named later) , then make a couple grilled cheese sammies, and eat until you explode LOL...
