Wink  Buon Giorno, Good Morning,
 
TERI signifies shiny or bright and YAKI translates to Roast, Grill or Broil. Here is a simiplied recipe for Chicken or Salmon Teriyaki which I had learnt to prepare at a Madrid Culinary Institute Course I had taken at: Le Cordon Bleu Madrid. This versatile plate can be prepared with chicken or salmon or shrimp or beef or pork ...
 
How do you Teri Yaki ? 
 
 
deboned chicken breasts or your favored parts
1 tablespoon of Oil of your Choice
1 tablespoon of fresh minced cilantro or parsley
 
MARINADE ...
 
100 Ml. Sake rice wine ( can sub Jerez Dry White Sherry )
100 Ml. Mirin Sweet rice wine ( can sub  cider vinegar )
100 Ml. Dark Soy from Japan
1 tblsp. sugar
2 tblsps. freshly grated ginger
1 tblsp. minced garlic
 
*** Marinate for up to two hours in above marinade
 
1) with a sharp knife or fork, create stabs in the chicken breasts so that the marinade shall be absorbed throughout
2) sauté the chicken until golden 3 to 5 mins. first side
3) then reduce the flame and cover & turn over the chicken breasts and sauté 10 mins. longer
4) prepare the salsa and mix all ingredients and boil for 2 mins. ( let thicken and reduce )
5) then, drizzle chicken with this salsa and let simmer 15 mins more
6) then, drain and plate, drizzle sauce and sprinkle with cilantro
 
SERVE with a Rosé or sparkling Rosé ... and drizzle fresh lime or lemon on the chicken ...
