With all the attention on the Canadian Olympics, here is a dish many call “The Canadian Comfort Food”--Poutine
 

From Wikipedia:

Poutine is a dish consisting of French fries topped with fresh cheese curd, covered with brown gravy and sometimes additional ingredients.

Poutine is a diner staple which originated in Quebec and can now be found across Canada. It is sold by fast food chains (such as New York Fries, A&W, Harvey's, Ed's Subs), in small "greasy spoon" type diners (commonly known as "cantines" or "casse-croûtes" in Quebec) and pubs, as well as by roadside chip wagons. International chains like McDonald's, A&W, KFC and Burger King also sell mass-produced poutine in Canada.

 

Basic poutine: Fries, cheese and gravy

From Chef Sam Zien

Serves 2-4

INGREDIENTS

• 16 ounces frozen french fries, the skinny kind

• 8 ounces beef gravy

• 2 teaspoons Maggi seasoning

• Fresh ground pepper

• 6-8 ounces cheese curds or 6-8 ounces fresh mozzarella, cut into a small dice

DIRECTIONS

Cook fries to package instructions, but you want them nicely browned and crunchy.

In a small pot mix the gravy, Maggi seasoning and pepper until hot and bubbly.

Break up the cheese curds if using, or dice the mozzarella.

In a bowl, layer as follows: fries, cheese, gravy.

Season to taste with freshly ground black pepper and kosher salt.
