In 2001, we had gone to Oslo and Bergen, Norway to see an old friend who used to live in Florida. Upon this visit, we had some wonderful Norwegian Torte, which is a coffee, cocoa, cinammon and raisin & / or almond or hazel nut cake.

Here is the cake recipe ... ( Note: the Muffins can be prepared from the same cake recipe ).
 
2 cups of Espresso ( 500 ml. )
1/4 cup sugar
2 tblsps. cocoa
1 cup of chopped almonds or hazelnuts or combo ( total 165 grams )
*** optional: raisins and / or peeled and cored thinly sliced apple.
125 grams or 1 cup butter room temperature
1/2 tsp vanilla extract
2 eggs beaten
2 cups sifted flour
1/2 tsp. baking soda
1 tsps. baking powder
1/2 tsp. salt
1 1/2 tsp. cinammon
1 tsp. nutmeg
1/4 tsp. allspice
 
1) mix the espresso (liquid), the sugar, cocoa and the chopped raisins, almonds and hazelnuts in a saucepan
2) bring to a light boil and reduce heat thus, simmering 15 mins. Let cool to room temperature.
3) cream butter and sugar until fluffy and add the vanilla extract and the eggs one at a time, whisking thoroughly after each addition
4) sift the remaining ingredients and add alternatively with the espresso mixture to the butter mixture
5) gradually pour into a well buttered 10" baking square pan ( 25 cm. )
6) bake at 180 degrees centig. or 350 farenheit degrees for 50 to 60 mins. When cool, dust with confectioner´s sugar if desired.

looks great, one i would like to try - and i love the opening photo! as a scandinavian (swede), i really enjoy seeing things like this ~ will definitely try....
