A dear friend of several years, Emily and a native of Seattle, had passed some time in Madrid Capital working for Disney Spanish Division. During this time, we had developed a wonderful friendship, over the years she was here. She always prepared such a lovely Homemade Chai, Black Tea with spices and cream.    Darjeeling Tea - www.darjeelingboutique.com      Photo Courtesy: The Tea Gallery.    Here is Emily´s HOMEMADE CHAI TEA RECIPE ...  1 two inch piece of ginger, sliced into very thin rounds 2 cinammon sticks 2 tsps. black peppercorns 10 whole cloves 6 cardamon pods 6 cups cold water or mineral water 6 bags of black Darjeeling tea 2 cups of cream 1/2 cup packed golden brown sugar  1) blend the ginger, cinammon and black peppercorns in a medium saucepan 2) using a mallet or large wooden spoon, lightly crush the spices 3) add the 6 cups of mineral water and bring to boil over high heat 4) reduce heat to medium low and partially cover the saucepan 5) add the tea and steep 3 mins. 6) discard the tea bags of tea ball with Darjeeling 7) bring the tea to a simmer and and whisk in the sugar until it dissolves and then gradually add the cream and stir until smooth and velvety 8) strain the Chai and serve hot  This is a great keep you warm tea and its complex aromas, are absolutely wonderful too, especially, if you feel a cold coming on, it is perfect for chasing it.  Enjoy, Margi. |

Lovely recipe, Margi! Reading her ingredient list I just get a feeling of being comforted by the wonderful flavors in a cup of chai tea.

Rod, & Ahron, & Dan, Good afternoon. This versión of Chai is very wonderful ... and aromatically just sensational ... It is truly healing too ... Ginger is a remedy for nauseau and motion as well as sea sickness ... The cardomom, cinammon and cloves so fragrant and pleasurable ... Quite a touch of the exotic and extraordinairely pleasant and soothing ... Do not drink at night, as black tea has more caffeine than Espresso ! Drink after lunch or use a de-caf black tea ...
