Risotto di Funghi

Robbio, a small town, in Lombardia, is located in rice country. Risotto is a sophisticated yet very simple dish, which can be prepared with numerous ingredients, including Funghi or Mushrooms, asparagus, shrimp with lemon, leek & shallot, and numerous other combinations.
 
Here is a dish that my significant other always enjoys.
 
Risotto di Funghi ...
 
1 1/2 pounds of mushrooms / funghi ) of choice and availability
2 cups of chicken broth homemade
2 tblsps. Evoo
1 1/2 cups of chopped shallot or green scallion or spring onion
1 1/2 cups of Carnaroli or Arborio Rice short grain from Lombardy
1/2 cup Reggiano Parmesano freshly grated
2 tblsps. butter
1/4 cup shaved Reggiano Parmesano
 
1) in a large skillet, heat some Evoo over low flame
2) add the shallot or the green scallion or the spring onion chopped very finely
3) sauté until translucent about 5 mins.
4) add the rice and stir very gently 2 mins.
5) add 2 cups of chicken broth homemade
6) simmer until the broth is almost reduced
7) stir frequently
8) cook until the rice is just tender ( do not over cook the rice ) and add the mushrooms that have been sliced and rinsed thoroughly
9) add more broth as needed and allow each addition of broth to be absorbed before adding another addition
10) mix the grated cheese and butter into the rice, once the mushrooms are almost tender; and season with salt and freshly ground black pepper: and add  a pinch of thyme, orégano and parsely chopped finely or dry.
11) top with shaved cheese.
 
Serve with a lovely Italian Red Wine; and hot oven crusty bread.
