This braised beef Greek recipe was given to us, many years ago, and it is just a delight to the palate.
BRAISED BEEF WITH FRESH GREEN BEANS
1 /2 KILO GREEN BEANS OF CHOICE
4 TBLSPS. ONION MINCED
1 KILO BEEF STEW CHUNKS
2 FRESH TOMATOES, DESEEDED AND PEELED & GRATED
400 GRAMS OF CANNED PLUM TOMATOES
1 QUART CHICKEN OR VEGETABLE OR BEEF BROTH HOMEMADE
A pinch of Sugar
200 GRAMS OF SMALL ROUNDISH POTATOES
2 RED FLORINA PEPPERS IN BRINE OR EVOO, DRAINED, RINSED AND SLICED INTO DICE
2 TBLSPS. FINELY CHOPPED FRESH PARSLEY
1 TBLSP. FINEDLY CHOPPED FRESH MINT HERB
SALT, FRESHLY GROUND PEPPER & A PINCH OF ORÉGANO
1) blanch the string or green beans for 3 to 4 minutes in a large pot of boiling salted water and drain
2) heat Evoo in a large wide pot and sauté the onion. I employ leek and shallot or spring onion and then, incorporate the meat and stir continuously until it is browned golden on all sides
3) add the fresh and the canned tomatoes, the broth of choice, and the peeled rinsed and patted dry potatoes
4) cover the casserole and bring to boil over medium to high heat, and then, lower heat to low simmer and simmer
the stew for 35 minutes.
5) readjust spices; the salt, and the red pepper and the freshly ground black pepper, orégano and a pinch of sugar
6) stir and cover pot and simmer another 30 minutes
7) add the blanched green beans and continue simmering for another 12 mins. until most of the juices in the pot have been absorbed and then, add the parsley minced and the minced mint leaf ...
8) serve with an oak aged red wine, and oven warm flatbread or pita; or Italian style crusty crunchy bread

Yummy ...I like green beans and I often cook them with chicken.
This recipe sounds good for my saturday gathering with friends..thanks Margi
