a person who wants to learn the true fundamentals of old-school barbecue would be well advised to check out a document called the BBQFAQ. it can be found here:

(s)he can download a SAFE version of the BBQFAQ in word format. it downloads as a zip file and then can be extracted to the desktop, to be read at leisure. a lot of the information about specific models of smokers is dated, but still worth reading. the rest of the document is completely relevant and contains lots of very good information, but more than that, it goes straight to the heart of what barbecue really is. to sum it up best, i'll quote one of the authors of the FAQ: "put your engineering books away; we're cooking meat here."
