    Happy Spring/Summer All! 

   I think it's quite apparent that many of us are busy this time of the year.  My hopes are to get some of these projects done so I can take it a bit easier through the summer.

  Which brings me to my question...

   Have you got a nice QUICK summer recipe to share?

  Easy gathering, easy prep, and easy cooking.

I make a "Dallas Hot Wiener" chile like sauce and freeze it in 3 hot dogs worth increments. I do the same with chopped onions and hot dogs and buns. The it's just a matter of boiling the dogs, steaming the buns, nuking the onions and sauce. To put it together, bun, dog, spicy brown mustard, onions and sauce. Some frozen french fries in the oven and it's pretty fast and easy.

1) Brook´s mango radish salad that I turn Spanish with acorn fed ham ( see post and fotos from HOSER AND MYSELF )
 
2) CAPRESE WITH MOZZARELA DI BUFALA & BASIL
 
3) SALADS OF ALL TYPES WITH FRESH VEGGIES & OAK LEAF RED LETTUCE & ARUGULA OR ROCKET AS IT IS CALLED IN UK ... ( in Spanish; rucola )
 
4) SEASONAL FISH: MARINATED SARDINES / BABY HAKE ON SKEWERS / CALAMARI ROMANA SAUTEED ITALIAN STYLE / FRESH CLAM SEASON / FRESH MUSSEL SEASON HERE ( STEAMED IN WHITE WINE ) OR SERVED WITH EGG PAPPADELLI WHICH IS A THICK RIBBON PASTA ...
 
5) fresh white and green Navarran asparagus salads or sautéed in panko breadcrumbs and wrapped in acorn fed ham
 
6) GREEN MELON WRAPPED WITH HAM
 
7) SAUTÉED FRESH FIGS SERVED WITH FRESH GOAT CHEESE AND DRIZZLE EVOO & jerez vinegar
 
 
OFF TOP OF HEAD AT 12AM,

   All great suggestions....thanks!  Everything sounds so good


    Yesterday we had a fairly simple "summer" meal.  A couple of real nice ribeye's cooked on the grill with onion, red peppers and mushrooms.  Mashed potatoes on the side, for my oldest...she is a mashed potato nut (her email is even mashedpotato@)

  Another quick one I'll do is just a simple pasta with vegetables and evoo...sometimes I'll grill up a sausage and put it in there.
