Sometimes its fun to make something special when kids are home with you all day, especially big teenage ones that need a few life skills before heading off to uni....
Thus how to make potato crisps, just in case there aren't any in the cupboard.
Start with a Potato (Agria works best) and a potato peeler.
Fill a bowl cold lightly salted water and after washing the potato start slicing it with the potato peeler. If you have a mandolin  use that, but we are teaching kids here, the peeler teaches two skills at once, safely. How to peel a potato and how to slice a potato.
Let the slices fall into the cold salted water.
Now spread them out on a tea-towel or paper towels and thoroughly dry.
Heat about 2.5cm canola oil to 160°C in a small pan and drop in the slices a few at a time. Wait until they stop bubbling and lift out onto paper towels to drain. Repeat in small batches until all are cooked, season to taste.

Anne, have you ever tried these without peeling the spuds? A nice variation on the theme that, for some reason, tastes more differently than it should.

Brook, I agree skins on is best, and I didn't peel the potato - I seldom do. I just use the peeler to make thin slices. Sometimes if I am peeling, I make chips out of the skins - delicious with garlic aioli. 
I have recently been training my nearly 17 year old son to use a peeler to clean, peel, slice, chip etc, The purpose is to teach him basic food preparation so he wont starve when he goes to university in 12 months time.

Hila, I knew about parsnips, never thought to use beets! Thats a deffinate one to try, thanks.

Chips can also be baked - You can also make delicious Kale chips in the oven, which is a great way to get kids to eat greens. I grow Cavolo Nero for that, when it is ready I will post pictures.

Kale Chips

Ingredients
  • 1 head kale, washed and thoroughly dried
  • 2 tablespoons olive oil
  • Sea salt, for sprinkling
Directions
  1. Preheat the oven to 275° F.
  2. Remove the ribs from the kale and cut into 1 1/2-inch pieces.
  3. Lay on a baking sheet and toss with the olive oil and salt.
  4. Bake until crisp, turning the leaves halfway through, about 20 minutes.
  5. Serve as finger food.
Actually this topic is quite big, I should knuckle down and do some writing.
