I went on "fridge dive" the other day and decided to use up a few leftovers that I found, so here it is...the tastiest way to clean the fridge.

Found some leftover porterhouse steak (yes, they were actually too large to eat at one sitting), some leftover broccoli and onion, so all I had to add was some garlic and fresh potato.

Started by grinding the steak and onion with the KA


then finely diced some potato and started cooking them in leftover bacon fat


Cooked the spuds with some garlic for a few minutes, then added the beef, onion and broccoli


Here's where do something a bit different...as it can be a pain to get your hash to brown up properly, I partially cover it with foil and set a good heavy pot on top....in this case, my DO and just let it cook for a while


As you can see I've flipped on portion of it here, and it's browning nicely


Now after all that trouble to get it to brown up nicely what do we do?
Well, we cover it with ketchup of course, and chow down.Wink

   Looks delicious Hoser!  I love this type of hash that you made...it's a great way to use leftovers!  I recently made some tamales for the first time, using left over Mexican pork roast.  Once I thought about it I wondered why making leftover meat into tamales hasn't occurred to me before.  Now I've got hash as another great dish to make from leftover meat...sure sounds good ta me!

You had me 'til the ketchup, Dave.

This raises an interesting point. I know many people who claim to not eat leftovers. I never understood that, as the one thing that really trips my trigger is throwing away good food.

Turns out, they don't mean recycling the leftovers into a new dish, but, rather, using them in their original form. Personally, I don't object to that either; at least not on principal. But at least I now understand their objections.

Even so, can you imagine no turkey sandwiches the day after Thanksgiving?

Looks great to me, Dave - I'd sit down to a plate of that any day. Put an egg on top and dig in, I say...catsup is optional, of course!

Your hash reminds me of a Scandinavian project I've been meaning to try; I'll see about posting a recipe and photo tomorrow.
