Something I often fix for breakfast, fairly quick, cheap and will stick to your ribs.
A potato, 5-6 oz. is a good size for 2 people, dice small, 1/4-3/8 " dice a thick slice of a strong, hot onion, brown the potato in a skillet,when it is brown, add the onion and some chopped pepper, hot, mild or sweet as you prefer.
Cook until the onion is clear, salt, black pepper and steak seasoning on the mix, lightly beat 2 eggs and pour over the mix in the skillet, fold eggs into mix until eggs are set.

Serve on warm corn tortillas.
adjust quantities to suit the number of people eating breakfast, allow at least 2 tortillas per person
I have Melinda's habanero pepper sauce on the table at all times.
