Rumaki is a Hawaiian appetizer. Simply, it is pineapple chunks and water chesnuts alteranted on a skewer. Then wrapped in bacon, marinated and grilled.
For a marinade I used 1 cup Terrayaki sauce and 1/2 cup Malibu Carribean Rum.
Start the skewers with the bacon first, then alternate the pineapple and water chesnuts. Wrap the bacon around the kabob and hold in place with toothpicks.
When they are all trussed up, get them in the marinade for about 3 hours, turning every hour or so, then grill - when the bacon is done, so are the rumaki.
Some notes: The rumaki is a bit tedious to put together. And once things got on the grill the bacon quickly became unwrapped from the skewer. I wound up grilling the bacon on the side after a few minutes. Also the water chesnuts have a tendency to split in half when trying to skewer them. But the flavor in the end was excellent which is what counts I guess.
