its a gravy in the indian, not western sense, and I tend to throw it together without measurements. I guess if I'm roughly guessing:
  • 2 tablespoons of Pav Bhaji Masala (sometimes I blend my own masalas but this is easy)
  • 2 teaspoons cumin, ground
  • 1 teaspoon coriander root, ground
  • 1 teaspoon fenugreek
  • 1 tablespoon ground almonds
  • 1.5 teaspoon of amchur powder
  • maybe 1 tablespoon or even more of crushed garlic (I do like garlic)
  • 1 teaspoon of ginger
  • 1 teaspoon of tumeric
  • 2 large onions, chopped
  • Chopped red chilli, I used my home grown apache chillis, which are small but crazy hot. used 2.
  • oil (I used my chilli infused rice bran)
  • splash of white vinegar
 
in a pan or wok, gently heat a good spash of oil. add the spices (everything but onions) above and mix. add more oil and a splash of vinegar until you get it nice and paste-y. keep the heat medium, you shouldn't have to struggle not to burn the spices. Fry the paste (stirring lots) for about 2-4 minutes, it should become really aromatic and delicious smelling.
 
Then add the onions, and cook (still medium heat )until they go clear and start to sweat. then transfer the whole thing to a blender, and add two skinned tomatoes, or half a can of tomatoes, to moisten it a bit. Blend it smooth, and you've got a good indian gravy base.
 
add back to the pan and get it simmering again and you can add yoghurt or cream if desired, and chuck in the solids you want in your curry, paneer, potato, meat, legums, whatever. Then give it a good long simmer, until you see the oils starting to seperate a bit is the best, but I normally just do it til my rice or naan is done.

oh oops I think there is a teaspoon of fenugreek in there as well...You know how it gets, after you get a rough handle on something, it comes together different each time depending on whats on hand!
