15th CENTURY TORRIJAS ..

Torrijas, are an amazingly delicious Spanish Easter dessert, similar to French Toast, however, distinctly different in a  few of its ingredients.   Torrijas were first created in the 15th Century, and like uncountable Spanish Desserts, they are created by Nuns in Convents. 

However, it is highly likely that, Torrijas hailed from the AL ANDALUS period, and among these recipes, there is one called THE MOORISH ZALABIYYA ..

This Moorish specialty is similar to a Brioche which was fried in Oil and Sprayed with Honey.

At the beginning of the 20th Century, Torrijas had become a favorite in the Taverns during Easter Week or Semana Santa .. And are still served at the most fashionable bars through out Spain and also at Restaurants .. And sold at all fine bakeries & pastry shops  ..

HERE IS THE RECIPE FOR THE MOST FAMOUS EASTER DESSERT OF SPAIN ..

1 loaf of day old bread or day old raisin bread
1 liter of whole milk or red wine, NOT BOTH ..  
1 stick or stalk   of dried cinammon  
powdered cinammon
lemon zest
orange zest
1 cup of sugar
4 large or extra large eggs
3 / 4 liter of Spanish Extra Virgin Olive Oil 

INSTRUCTIONS ..

1)  Pour the milk into a sauce pan and simmer.  Add the sugar and the zest peel of 1/2  lemon and 1/2 orange, and the cinammon stick ..  

2)  Stir to dilute the sugar and before it boils, remove from stove top and let sit for 10 minutes so the flavors combine.

3)  Slice the bread into 2 centimetres thick slices and place in the milk mixture for 10 seconds only.

4)  Heat the Evoo in saucepan ..

5)  In the meantime, whisk the eggs in a large bowl ..

6)  Dip each slice of bread in the whisked eggs, and cover all parts of the bread slices.

7)  When the Evoo is hot, place the bread slices in the Evoo and sauté until Golden Brown.

8)  When ready, remove and pat dry on paper towels ..

9) Place all the bread slices in a glass casserole with a cover and bathe in milk or red wine, and powdered cinammon. 

10 )  Serve at room temperature ..  

***  These pair well with strawberries or other sweet fruits of the season and perhaps some nice Vanilla Icecream or Whipped  Cream ..

Ron,

If you are a fan of French Toast, you shall love Torrijas !  They are heaven !!  Yes, a very lovely lovely  flavor and aromatic dessert or you can even make them for Brunch ! 

And moreover, the historical references made to Torrijas is amazingly fascinating.
