thanks to mgwerks and exploreralpha for posting such great tex-mex recipes lately! they look like perfect items on a cinco de mayo menu!
 
are any of y'all cooking for today? we're just having plain, old soft- and hardshell tacos, nothing special, but if anyone else is making anything special for today, post it in the appropriate area and put a link here as a reply to this thread!

We have either Tex-Mex or Norteño food so often, there's no special  day for it.  I could exist on Latin foods!
