Made a nice Sunday ragu yesterday in honor of a friend's birthday, and served it up for dinner. Here's the recipe, and how it came out.

Spaghetti Sauce Supreme

Dave's personal best red sauce recipe

   1/4 teaspoon crushed red pepper
   1 - 4 inch pepperoni stick ground
   1 pound ground pork
   1 pound ground beef
   1 medium onion, diced
   1 cup sliced mushrooms
   2 cloves garlic, pressed
   2 tablespoons dried basil
   1 tablespoon dried oregano
   1/2 cup chopped parsley
   2 bay leaves
   1 can stewed tomatoes, undrained
   1 large can tomato sauce
   1/2 cup red wine
   2 tablespoons tomato paste
   1 tablespoon sugar
2 tablespoons extra virgin olive oil

__________________________________
1. In a large Dutch oven, saute' red pepper, pepperoni, onions, mushrooms and garlic in olive oil until onion is translucent.

2. Add pork, and beef, season with salt and pepper and brown until meat just loses it's pinkness. Deglaze with red wine.

3. Add tomato paste and stir in. Add remaining ingredients, bring to a boil, reduce to a simmer and cook for one hour, covered.

4. Remove cover and continue simmering, stirring occasionaly until sauce reaches desired consistency.
5. Just before serving, stir in 1/4 cup of freshly grated pecorino romano cheese, and pass more cheese with service.
