An easy side or relish that goes great with fish or chicken, or even by itself. Inspired by a blend of Indian, Thai, and South Pacific style food.
I sub ingredients in and out depending on what is in season and around. Here is what I used this time: That's the mango, red onion, limes, very sad spring onions ( I should wait for spring before eating them really), birds eye chili, red capsicum, kashmiri chili powder (yum), black pepper, salt, and the last of my long suffering coriander plant. Chop mango, juice lime into it (zest too if you want), add everything else - And stir. too easy: Fridge this for and hour or more before using. It kinda thickens a little bit in the fridge. Very colourful and packs a huge taste. |

That looks fantastic, Kiwi! You sure know how to use ingredients in wonderful and interesting combinations. The colors are very pretty and sure do go well together. What is Kashmiri chili powder? Never heard of that....regional name to a standard powder? Anyway, this recipe would be nice to duplicate and I'd like to get it right.

Kashmiri chili is a variety from Kashmir, you'll find it at Indian stores. I highly rate it. It is deep red and probably a medium on the scale of chili powders, but has a wonderful aroma, and more flavour than the hot chili powders. key ingredient of tandoori chicken. I'm sure you could substitute other chili powders and it would be just fine though.

Very nice salsa ... I make mine very similar however, I add: papaya, mango, ginger, pomegranate seeds ( Chinese apple ), cilantro, red onion, cilantro, avocado diced and the rest of ur recipe ... I call it Tropical Fruit Salsa ...
