Terrible Tim's Smokin' Good Baked Beans

I wish I could claim this work of art for my own but it is the creation of my good friend and hunting buddy, Tim.  He is a retired police officer, county sheriff, judge and also a dealer for Traeger Wood Pellet Grills who also cooks competitively.  He has created what I think is the most awesome baked bean recipe to be found anywhere.  It has quite a lot of ingredients and is a bit more involved than most bean recipes but the end result is worth it.  Everyone who tries these beans goes wild for them, they are almost a meal just by themselves. 

Here are the ingredients.

1 28oz can Bushes Baked Beans
1 15oz can pork and beans
1 15oz can red kidney beans (I use Bush's)
1 lb kielbasa or smoked sausage
4 slices of bacon
1 green bell pepper
1 medium onion
1/2 cup catsup
1/2 cup barbecue sauce (I use Kraft original)
1 T yellow mustard
1 T  cider vinegar
1 cup brown sugar
1/2 tsp garlic powder
1 tsp ground cumin
1/2 tsp black pepper
1 tsp liquid smoke




First fry the 4 slices of bacon until crisp...




while the bacon is frying chop the green pepper and onion...






when the bacon is crisp pour off half of the grease (where I'm from we NEVER throw away bacon grease)...



put the chopped onion and green pepper in the pan and fry until the onion is clear....




here in Georgia we are fortunate to have a couple of really good brands of sausage, Smithfield and Carolina Pride, the ones I refuse to buy are Hillshire Farms and Kroger as they have too much bone and gristle ground up into them for my taste....




while the vegetables are frying chop the sausage however you like...




once the vegetables are ready add the catsup, barbecue sauce, mustard, brown sugar, vinegar, garlic powder, cumin, and black pepper....



bring this to a boil and cook for 3 or 4 minutes, while it's cooking drain the kidney beans, do not drain the other beans...



once it has cooked for a couple of minutes crumble up the bacon and add it to the pan...



then add the sausage, baked beans, pork and beans, and kidney beans to the pan and mix well...


remove from the heat and add the liquid smoke...





put into casserole dishes and bake uncovered at 350 degrees for one hour...




I served these tonight for dinner with smoked pork loin, baby back ribs, and Rivet's OMG potatoes.  I will write up the smoked pork loin and ribs separately.  There was a lot of smiling faces around the dinner table.

excellent! i'll definitely ahve to give this a try. my own baked beans never come out very well, and these look awesome!

Thanks Ron,  give 'em a try I guarantee they will be your go to beans once you try them.  Tim is a real genius when it comes to creating awesome dishes, he's not real big on computers but I am going to try and get him to join up here.
