As I alluded to in my "doubly blessed" thread, there was indeed a taste test yesterday at Tuck's Pub, where a lucky few were able to taste three different and quite tasty salsas on some homemade Aztec chips.
Young Nick and Dad Dennis were there...Nick took the leap and tried all three salsas, but his Dad I'm afraid....wimped out! Chef Glen and beermeister Jason were both all over the testing, as was I. Here's the way we lined them up, and the results I started off with the mild habañero from Boilermaker, so as not to totally burn out my taste buds early and render myself unserviceable for the rest of the test. The Mild sauce had a nice flavor and a subtle burn that come on a bit slowly, and hung on the back of your tongue for a few minutes. The hot habañero, also from Boilermaker was a surprise! We assumed it would be very close in flavor to the mild sauce, but it was not......much deeper layers of flavor lurked in this wonderful salsa....then it got right in your face and slapped you silly! The heat was almost immediate, but leveled off quickly, and made the salsa really a top-notch experience. Overall a great salsa...plenty of heat terrific flavors and the heat eased up soon enough so you wanted to go back for seconds. The Calypso Salsa, Rivet's entry was a totally new experience. First of all, when setting up I was struck by the different texture of the salsa...quite thick, almost like a compote. You really needed a spoon to empty the jar. The aromas given off by this tropical concoction were tempting, to say the least. The tasting it self was what I'll call a two-faced affair. Your first face was smiling as the sweet flavors of mango and papaya drifted across your pallet, then your second face reacted like old "Leroy Jethro Gibbs" just gave you a head slap. That heat ran right through you about a second after you tasted the sweetness. A great experience not to be missed. I found the level of heat in the calypso to be just about the same as in the hot habañero, but a different type of heat. The heat in the hot salsa peaked quickly, and lingered a bit...but mostly on the back of your tongue. The heat in the Calypso seemed to linger in your whole mouth for quite a bit longer than the hot salsa All in all, we had a great afternoon....ran out of chips, but not beer thank God. The final results were: The mild habañero got the fewest votes...the lower heat level also seemed to affect the level of flavors somewhat'. The Hot Habañero was a clear winner ...while we liked both of the hot sauces this one took the title for the tastiest. The Calypso...my favorite for the unusual sweet beginning it gives you, was the second favorite. Everyone like the flavors, but it was noted that the heat level held on to you longer than with the hot salsa. In finishing...John and Andy, thank you both so much! I think either one of these salsas would be a success if they were marketed on a commercial level. We had a great afternoon, and we owe it all to you guys! Thanks again! |
