One by Nigella Lawson and is always popular

Ingredients:
  • Ham or Gammon joint
  • Large bottle of full-fat coke (about 3 to 4 pints)
  • Large onion studded with cloves

Rub:
  • English Mustard Powder
  • Black Treacle
  • Brown Sugar (Demerara or similar)
In a large pan, pour coke over the meat joint and the onion.  Bring to boil, cover and simmer for 2 hours. Remove meat to cool.  I discard the liquid, but others use it to cook dried beans in.

Once cool, smear the rub over the meat and wrap in foil.  Cook in a hot oven for approximately 10 minutes (you should be able to smell the flavours mingling).

Serve warm with a side-salad.
