An old lady friend of mine, originally from New York, had relocated down to South Miami Beach in the 1980s. During this time, the Vet & I had lived there for almost 3 years; and Renee and I had become good friends.
One of her daughters, Gabriella had opened a lovely restaurant called The Whispering Moon in the enchanting centre of Santa Fé, New Mexico.
 
The Hotel Inn in Santa Fé.
 
 
Sweet Flour Tortilla Chips.
 
 
There were few sugar plums the night before Christmas. However, there were plenty of chili peppers, spices and salsas. 
 
Lovely town, with beautiful colorful architecture. The Shrimp Poblano, Jicama Salad, the Spice Rubbed Porc in corn husks and this dessert ...
 
The Luminaries ( Paper bag Lanterns), verses lights on bushes, were commonplace, throughout Santa Fe and Alburquerque. The unique look, and flavor of this region, the warm glowing farolitos, paper bag lanterns and the historic downtown churches, all re-enchant this lovely region.
 
Here is the recipe ...
 
SANTA FE HOMEMADE DESSERT TORTILLA CHIPS
 
1/2 room temperature stick butter
2 tblps. sugar
2 tsps. ground cinammon
Four 8 inch diameter flour tortillas
1 1/2 quarts of coffee icecream
fresh mint sprigs for garnish  
 
FOR THE SWEET TORTILLA CHIPS
 
1/2 cup cream ( for whipping )
1/4 cup hot water
2 1/2 tsps. instant espresso powder
8 ounces bittersweet or black chocolate or semi sweet
1/4 tsp. cinammon powder
OPTIONAL: SUGAR
 
1) Combine the butter, sugar and cinammon in small bowl to blend.
2) Spread the butter mixture evenly over the tortillas.
3) Slice each tortilla into 8 wedges
4) Place the wedges on 2 baking sheets buttered side up, spacing apart
5) Pre-heat oven to 400 degrees farneheit
6) bake the tortillas uncovered until crisp, puffed and golden about 8 minutes
7) Remove from oven
8) Place a large scoop of icecream in each of 8 dessert glasses, drizzle in chocolate sauce and stand 4 9) torttila chips in each glass with a sprig of mint
10) Serve and Enjoy.  
 
CHOCOLATE SAUCE
 
1) whisk cream, 1/4 cup hot water, and espresso powder in heavy small saucepan to blend
2) bring to simmer over medium heat and then remove from heat
3) add chocolate and stir until melted and smooth
4) stir in cinammon

LOL For those seeking a salty tooth profile; I would use Ricotta homemade, or cream cheese and chili pepper or flakes and a drizzle of lime, butter and a Monterrey Jack or other spicy cheese for example; aged Pecorino or Ibores Spanish Goat Cheese with a Smoked Paprika Rind. Electrically mix all together. Taste taste, and perhaps add chips of piquant sausage or salami.
 
Spread on the corn tortillas and prepare in Mini version; and follow directions above for the sweet; except use these ingredients.

I never would have thought to mix the lime chili flavorings with a soft cheese.....I will have to try it, it sounds delicious! Thank you, ~Feather

Feather: A Margaux Santa Fe Experiment... Wonderful. Mexican cheese, called Crema which is like sour cream or sour cream or creme fraiche shall work too.   I use Ricotta or cream fraiche ...Enjoy. All my best and thanx for all ur feedbk. Mare..
