Eggs have been playing a quintessential role in the Spanish kitchen since time memorial, and as a saving grace for abstainers at the most difficult times of their fasting (The Lent) and as a source of high prtein ..  
Huevos Rotos are one of the most popular tapas for a group of 2, 3, or 4.  The literal translation of this tasty Castillan dish is " grief and distress " (duelos y quebrantes) which dates back to Author, Miguel Cervantes, the founder of The University of Alcalá,  26 kilometres from the city of Madrid.  

Why the name Duelos and Quebrantes which signifies Grief and Distress ?   In the daily fare of the two fictional Characters,  Don  Quixote and Sancho, they spent three parts of their income on food consumption  and were eminent men of letters and long journies,  however, were troubled and sad ..  

The name has actually taken on a more modern tendence,  Broken Eggs and this heavenly, easy and quick lunch or tapa can be prepared in four ways:

With Iberian Ham ( or sub: Proscuitto )
With Blood Sausage ( Morcilla de  Burgos )
With Xistarria ( Navarre Chistorria Sausages )
Or all  3 .. 

Note:  This can also be prepared vegetarian style with Green Aspargus and / or Mushrooms .. 

Here is the basic recipe for 4 .. 

60 grams of  Pancetta or Bacon 
100 grams of cured Ham diced tiny
100 grams of sausage of choice 
6 eggs beaten very lightly 

1)  Heat the pancetta or bacon ( note: one can use a vegetarian bacon ) with the ham and / or the sausages in a skillet and when the fat begins to ooze out,  add the eggs and créate a sunnyside up in your style ( runny, médium or well cooked ).  
2) Sprinkle salt to taste and freshly ground black pepper ..

Serve in earthenware dishes ..  The eggs should be "sunnyside up " and prepared over the meats which prior to adding the eggs,  *******  should be drained of the excess pancetta grease .. 

Serve with crusty rustic country bread for dipping and  a glass or two of red wine from the Spanish regions of:  Cuenca, Castilla Leon or Castilla La Mancha ..

Thank you ..   Yes, I do believe that Cervantes the author of  Don Quixote & Sancho, created quite a bit of himself & his woes, of  hard times, in the fictional characters ..  Had a wonderful time doing the research in Alcalá de Henares ..    

It is quite a popular tapa and so easy to make at home too ..
