This recipe hails from my Mom Eva´s collection ... It is quite delicious ... and pairs wonderfully with an Iced Espresso and a Digestive of Bailey´s Irish Cream on Ice ...
IRISH CREAM CHOCOLATE MACADEMIA NUT PIE 6 EGGS 1 CUP SUGAR 1/2 TSP. SALT 6 OZ. BUTTER MELTED ( 1 1/2 STICKS ) 1 1/4 CUPS CORN SYRUP 3/4 CUPS BAILEY´s IRISH CREAM OR SIMILAR LIQUOR 1 CUP CHOCOLATE CHIPS 2 CUPS OR 10 OZ. MACADEMIA NUTS 1 DEEP UNBAKED 10 INCH PIE SHELL 1. CREAM THE EGGS, SUGAR, SALT AND BUTTER 2. BEAT OR WHISK IN THE CORNY SYRUP AND THE LIQUOR AND THEN STIR IN THE CHIPS AND MACADEMIAS 3. POUR INTO PREPARED PIE SHELL OR HOME MADE PIE SHELL AND BAKE FOR 40 MINS. AT 300 DEGREES FARENHEIT ( OR 45 MINS. UNTIL GOLDEN BROWN ON TOP ) 4. I normally use a premade one. I usually have a few on hand for when the urge to make a pie strikes
One question though. Are the macadamia nuts whole or chopped?

Macademia Nuts: The original recipe does not say anything about chopping them however, I always break them into quarters or in halves, as they are quite large. Have nice Sunday. Ciao. Margi.

I use Tenderflake brand pie shells. They're made with lard. Any grocery store in my area has them.

OK, what do you think of this Margi? I substitute maple sugar for regular sugar. I substitute maple syrup for corn syrup.

I wouldn't go the maple route, but rather tropical sweeteners to go with the macadamias -- something like palm sugar and cane syrup. Of course, the dish is already something of a mutt with the combination of Baileys and macadamias, but it might be interesting to further rationalize it by using coconut cream and rum instead of the Baileys....
If you really want to go the maple route, I'd be tempted to keep the Baileys and use walnuts instead of macadamias....

Ak1, Buon Giorno,
Firstly, I am very pleased that you shall be preparing this pie ... It is quite good in its original state, however, if you wish to experiment: I might consider SUGAR IN THE RAW verses maple ... Less sweet ...
I have never tried maple with this pie, and it might conflict with the Bailey´s Irish Cream which is sort of a Coffee - light Chocolate Malted Milk sort of tasting liquor ...
Perhaps, do a trial run, and taste testing ! See which taste profile best suits you ...

No worries, I do plan on making at least one pie with the original recipe. As for sugars, I have a block of Jaggery & a block of pure cane sugar that I could use. Hmmm! So many ideas, but so little room in the ovens

the maple and walnuts sound like a great variation, and the original recipe looks like it can go from ireland to the caribbean to new england, with several stops in-between, depending on the direction one wants to nudge it....very interesting!

Holy Crap!!! I forgot how expensive Macadamia's are. I just paid 30 dollars for 800 grams!!! It's a good thing that they are tasty. Brings back memories of my honeymoon in Hawaii 27 years ago.

I have a suggestion; what about a Macademia Liquor with the left over amount from the Pie ?
Hawaii: Was in Kaui, Lanai & Honolulu back in 1983 ... I loved Popu Beach, Kaui ... Breathtakingly Beautiful ...

Calm down ... It was just an idea, because I have seen some exotic home made liquors become very popular here in the Madrid Capital and in the big Italian cities. Big Summer Trend and bartending art here.
For example:
Acorn Liquor
Exotic Fruit Liquors
Rose Liquor
Flower Liquors
Nut Liquors ( almond, hazelnut, walnut, macademia )
So, let us see what is online, and I shall pitch in some research assistance if you wish ... I would begin with Origin ... Hawaii ?
