I tried this Irish Soda Bread recipe with a twist today, it is most definitely a keeper! I think it may be the best Irish Soda Bread recipe I've ever eaten. VERY moist! Please forgive me for the newbie pics, trying to work on this!

I did make a couple of modifications to the recipe, I added green onions instead of regular onion to add color. I was pleasantly surprised how the flavor in the green onion came out in this recipe. Also, I ended up adding a tad bit more buttermilk to the recipe because the dough seemed dry. I ended up using an entire pint of buttermilk in this recipe. You can start with the amount the recipe calls for, and go from there. I also only baked the two loaves for 25 minutes, but I suppose that would depend on your oven.

Here is the recipe:

i think that your innovation of the green onions was a perfect idea, especially considering the holiday. it looks to me like you did a perfect job, and i can only imagine how good this will taste during your saint patrick's day feast!

Looks absolutely delicious!  Thumbs Up   Excellent job you did there Mom, expecially as Tas~ pointed out with the green onion. Looks beautiful, and with that fluffy/crusty/sodabread look to it, made it even better. Very nice first post, and you just got us wanting more of your cooking!

Breads are definitely popular around here, and you did nicely for St. Patrick's day..thanks for sharing.
