Hunter's Dish

Quote This good, solid dish is a sort of shepherd's pie; the potato can either be mixed in with the other ingredients, or used to form a crust on the top.

To serve 2 to 4:

1/2 pound onions
salt and pepper to taste
2 oz fat for frying
1 sour apple, peeled and chopped
1/2 to 3/4 pound minced cooked meat
1 pound mashed potatoes
Breadcrumbs
1/2 pint stock
1/2 oz butter
A pinch of ground cloves

1. Preheat oven to 450 degrees. Slice the onions and fry them in the fat until they are lightly caramelized.

2. Add the minced meat, stock, salt, pepper, cloves, apple and mashed potatoes (if desired). Simmer gently for 1/4 to 1/2 hour.

3. Pour the mixture into a greased, fireproof dish. If the mashed potatoes were not included with the meat, spread them over the top.

4. Smooth the surface, sprinkle with breadcrumbs and dot with butter. Brown the Jachtschotelin in the oven for 10 minutes.
