Hello! I know that cornbread is generally considered a southern treat but the reason I'm posting this here is because I used Jiffy Mix which is native to Michigan. This recipe will also fall into the catagory of Johnny Cake but those of us from the Mid-West don't know cornbread that is not sweet.
3 eggs
2/3 Cup of milk
small can of creamed corn
(half this size)a handful of minced jalepeno slices
a good splash of jalepeno juice
Mix it all up with a wisk making sure to maintain the batter consistency. Pour into a greased rectangular pan and put it into a 400 degree preheated oven for 20 minutes. Let cool for a minute and then rub butter on the top (Irish butter is a treat). Serve warm or cooled.

Hey JP, nice recipe and one I remember well from growing up! Definitely a tasty addition to any meal and once in a while we used to add a bit of shredded cheddar too. Thanks for sharing another great recipe

hey, jp - when living in south dakota, i had a friend who would make something very, very similar to this dish - it was always excellent and i often wished i had the recipe - and here it is!

I apologize for not taking pictures of the process. I will try to do that in the future.
The only tip I can add is that it is essential to get the top buttered while it is still hot enough to melt the butter well. That way you can set it aside or take it to a pot luck and not worry that it is served warm because it will still be moist no matter the temp. with the melted butter in it.
The jalepenos are a nice compliment to the sweetness of the Johnnycake Hoser.
Adding shredded cheddar is a great idea Rivet.
Tas, this is something I had in a restaurant during a trip back to Michigan, I decided to try to replicate it. Glad you can use this one.
