Keo's Cucumber Sauce



1 Cucumber (preferably Japanese or I use English hothouse cukes)
5 Tbsp sugar
1 cup boiling water
1/2 cup white vinegar
1 tsp salt
3-5 Thai red chilis, seeded and minced
3 shallots minced
1/4 cup fresh cilantro, minced

Peel cucumber, scoop out seeds with a spoon and slice thinly.

Dissolve sugar in boiling water, stir in white vinegar and salt.

Pour mixture over cucumber slices and sprinkle with chili peppers and cilantro.

Chill before serving.
Go ahead...play with your food!

this looks like a great one for spring or summer. something about cucumber salads make them the ultimate "refreshing" food. thanks for posting~
