Keo's Satay Sauce

Keo's Spicy Peanut Satay Sauce

 
1/4 cup vegetable oil
2 cloves garlic, minced
1 onion, small dice
1 teaspoon ground dried red chili pepper
3 Kaffir lime leaves*
1/2 tsp curry powder
1 Tbsp chopped fresh lemongrass
1 cup coconut milk
1/2 cup whole milk
1 - two inch long cinnamon stick
3 bay leaves
2 tsp tamarind paste*
2 Tbsp fish sauce
3 Tbsp dark brown sugar
3 Tbsp lemon juice
1 cup chunky peanut butter
 
1. Heat oil in a skillet and saute' the onion, garlic, chili peppers, lime leaves, curry powder and lemongrass for 3-4 minutes.
 
2. Stir in coconut milk, milk, cinnamon stick, bay leaves tamarind paste, fish sauce, brown sugar, lemon juice and peanut butter.
 
3. Reduce heat and cook, stirring frequently until sauce thickens, about 30 minutes.
 
4. Transfer to a double boiler if not serving immediately, as sauce is very susceptible to burning.
