TRUCHAS CON JAM脫N, SETAS y VINO, signifies fresh Trout, prepared with Iberian Ham, wild mushrooms and Red Wine in La Rioja and Navarra.
Here is a common classic spring dish with lots of complex flavors ...
LA RIOJA TRUCHAS CON JAM脫N IBERICO, SETAS y VINO TINTO ...
La Rioja y Navarra Fresh Trout, with Iberian Ham, Wild Mushrooms and Red Wine ...
For 2 to 4 people:
4 Freshly caught rainbow coral salmon colored trout
salt and freshly ground black, white, green & rose peppercorns
a few fresh thyme sprigs ( or dry thyme )
4 long slices of Iberian air dried Ham ( or Prosciutto di Parma )
4 ounces of Porcini, Shitake or other available spring variety
1 1/4 cups of La Rioja or Navarra Red Oak Aged Wine
minced onion or shallot or green onion to taste
minced garlic to taste
1) rinse and wipe the cavities of the whole trouts and salt lightly and add a sprinkling of freshly ground peppercorns, garlic and onion or green scallion or shallot minced finely
2) wrap the jackets of the whole fish in the ham, making sure that the white fat of the ham slices is on the exterior
3) in a saut茅 pan, add some Evoo and saut茅 5 minutes per side and press the middle with your fingers to make sure the flesh is firm; then place the saut茅ed fish on a platter and tent to keep warm
4) Now wash and trim the mushrooms and saut茅 them in 2 or 3 tblsps. of Evoo, sprinkle with salt and freshly ground pepper
5) Saut茅 until golden and then, add the red wine and let it bubble up a bit, until the aromas of alcohol have ceased; and the sauce has thickened and reduced
6) Drizzle this sauce gradually over the fresh trout wrapped in air dried ham
7) Serve with the same red wine you have cooked with and crusty rustic oven warm bread and enjoy !
