Very simple dish today; fresh wild trout from Navarra stuffed with leek, shallot, a bit of garlic minced, de-seeded tomato, a few almonds, a drizzle of lemon, Evoo ecological and of course Jamón Iberico de bellota de Jabugo ... evoo ... White wine ...

** prepared in earthenware in oven

QUICK LUNCH, SIMPLE AND VERY NICE ...
