Late last week, I ordered a dedicated sausage stuffer; in particular, I purchased a LEM 5-pound stuffer with metal gears. Here's a link to the one that I ordered:

Even better, Amazon's "warehouse" had one that was "returned new with possible package damage" at an incredible discount:

The quality of this brand and model of stuffer is rated as top-shelf; over the weekend, I had time to look over the reviews; out of two-hundred-thirty-something reviews, only two were negative, and after reading those two negative reviews, I'm pretty sure that the problem was with the reviewer, rather than the stuffer. 

I came home from work on Monday to find that the sausage stuffer had arrived one day early - bonus! The box (and only the box) was indeed damaged on a corner - and was packed inside a slightly-larger box - but other than that, there was no other damage and all parts of the stuffer itself were absolutely, 100% fine and in brand-new condition. In my mind, a crushed box corner is more than worth a 25-dollar discount.

This is something of a "luxury purchase" for me; it is a rather expensive item that is a bit out of my "disposable income" budget, and not totally necessary for making sausage. Having said that, it is very useful, and also helps make good sausage better; the reason for this is that it stuffs sausage casings without running the meat through the "worm" of a grinder a second time. Sausage that is stuffed through a grinder is perfectly adequate, but using a stuffer will result in textural improvements, as well as a sausage that is not as "dry." All-in-all, a good purchase for someonw who makes a lot of sausage, especially when you are able to find a good deal.

I am looking forward to giving this a try, first on Hungarian kolbász, then perhaps on Italian sausage or Spanish chorizo. I also have an idea for German bratwurst, as well. Sooner or later, I'll also give some German/Russian farmhouse sausage a try. Heck - I'll be making much more than just those varieties, but I gotta start somewhere!

I have the same stuffer, except from Northern and with plastic gears.
I have been very careful with it as I have learned Northern almost never has any parts for what they sell.
I believe the ss gears on the LEM will fit the Northern, someone said they would so if they break, I shall order some gears from LEM.
I believe you will really like it, I have tried a couple or 3 of the horn type stuffers and usually had more sausage out the back than into the casings.
I got a tube of food grade silicone grease at the auto parts store and use it on the o ring and gears.

Plastic gears are fine. Give them a drop or two of vegetable oil before stuffing, lubricate the plunger o ring and don't push  too hard when you get to the bottom. Do that, and the nylon gears will last a long time.

Along the same lines, I spent/wasted $300 on grinders, 2 that broke gears and there were no new gears available from the original source and a 3rd that had a bastard size head, bigger than a #8 and smaller than a #10 with a much smaller outer support hole for the auger, when the plate I use the most went bad I tried to get a replacement and found the source no longer carried that grinder and had no parts for them.
I went looking for a new grinder , found an LEM at Amazon, new in the damaged box for $180 with free shipping, it is nice, much more quiet than the other grinders, Really wish I had bought one to start, would have saved quite a bit of money and problems.
I do not recommend Northern for most purchases, their after sale service is very poor , in my opinion.
The other vendor I do not have a good opinion of is the Ebay vendor who sells the 3000watt grinders, they are actually 800 watts normal load and the vendor is very poor on after sale service.

   Hi Tas...I was just wondering how everything is going with your stuffer to this point.  I'm guessing you're well acquainted with it by now.  

   Up until this point I've used my Kitchen Aid for grinding and stuffing.  My brother got a larger stuffer, so I got his smaller one, like your LEM.  I know from using his, on occasion, that there really is no substitute for a dedicated stuffer.  It is the right tool for the job...a grinder with tubes can work...but not nearly as well as a stand alone stuffer...and the kitchen aid does many things well...grinding and stuffing I don't believe are those things.

   With my brothers new stuffer it came with SS stuffing tubes, which he used the other day.  I know that he remarked how silly quick the casings went on the SS tubes.  He's made a decent amount of sausage and commented he wished he had seen word on how well the SS tubes worked years ago.  I just bought myself a grinder and won't be looking to purchase any SS tubes right now...But I thought you may want to keep an eye open for some.  I'm hoping to pick some up for a decent price nearing the holidays.



  Now, drinks...I just bought a grinder off Amazon...hopefully it's not the one you had bad results with...do you remember the name?  I couldn't move into commercial type grinders, so I relied on reviews and some review site, like this one.  Hopefully it serves me well

I first had a Northern, gears went out quickly and , of course, Northern had no parts.
Next was a no brand on sale, burned up the motor at the second use, guess what, the vendor was out of business, next was a turboforce 3000, it was the one with the bastard size head, too big for #10, too small for #12 and with a much undersized center hole.
I now have a LEM #5, quiet, strong and very satisfactory. It was $180 in the warehouse clearance section, with free shipping.
Lotsa luck on your purchase, hopefully , you shall have better results than I did.

  Thanks for the info, Drinks!  It is the tf3000.  I just want it to grind through meat without worrying about clogging up with sinew your melting the fat.  I'll have to give some thought to keeping or returning the tf3000.  One thing I know...is that I don't want to buy another meat grinder.
