My sauerkraut looks to be plugging along without any significant trouble. I might need to add a little bit of brine to the mix, in order to get the sauerkraut fully submerged. For the sake of reference, the brine consists of 1 teaspoons of salt to 1 cup of water.

In the meantime, I do believe that I found my next sauerkraut project; I'll post the recipe if (when!) I make it, but for now, here is the link:
