Maltese Fish Soup
6 small freshly caught fish (or heads and tails of larger fish)
1 large onion, finely sliced
5-10 cloves garlic, peeled and roughly chopped
500 g tomatoes, halved
Some fresh herbs, such as basil, mint, marjoram and parsley
1 liter water
2 tbls tomato puree
3 tbls olive oil
Salt and pepper
Juice of half a lemon
4 tbls plain rice
Lemon wedges for serving
After cooking the whole thing is passed through a vegetable mill until only the skin and dry bones of the fish remain.
