This is a terrific salad to make when you're overloaded with all those tomatoes and want something a little different
Mediterranean Tomato Salad Serves: 6 A great compliment to lamb, Moussaka, any Greek dish. Herbs lend a Mediterranean flavor to a very colorful salad.1 large clove garlic 3 large ripe tomatoes 12 pitted black olives halved lengthwise 3/4 cup feta cheese cubed 3 tablespoons red wine vinegar 1/2 cup extra virgin olive oil 1/2 teaspoon dried oregano 1/2 teaspoon dried thyme Kosher or sea salt to taste Fresh ground black pepper to taste __________________________________________ ![]() Halve the garlic clove and rub the inside of a large salad bowl with it...discard garlic.* Cut tomatoes into bite sized pieces and place in bowl. Add olives and cheese to bowl. Add remaining ingredients, season with salt and pepper and toss. Place in refrigerator at least 4 hours. Warm to room temp before serving. * I sometimes prefer to mince the garlic and add it, depending on the mood I'm in...I may also occasionally add some thinly sliced red onion. Step by step cut tomatoes and add to bowl with garlic (either method) ![]() ![]() Add oregano and thyme, then cut olives and add with all remaining ingredients ![]() ![]() Toss with all ingredients combined, taste for salt and pepper.
