Good Afternoon, Buenas Tardes e Buonasera,
The PEPITO sandwich on the Iberian Peninsula, has been prepared with a young loin of beef ( filete of red veal under 1 year of age ) and served on a bed of caramelized onions throughout the nation´s taverns.
Furthermore, this version prepared with loin or porc is from Chef Martín Berasateguí, from San Sebastián, the Pearl of The Bay of Biscay, located in the Basque Country. One may sub veal or beef scalloppine or loin.
Please also note: another way to prepare this luscious hero sub, is to stuff a whole baguette (hero bread ) with a pepito inside as the Venezuelans do with Fried Potato Sticks.
Loin of Porc on Caramelized Onion - By Chef Martín Berasateguí ...
4 SLICES OF HERO SUB ITALIAN STYLE BAGUETTE
4 slices of porc or red veal loin or beef loin ( scalloppine or filet of steak )
200 grams of onion; yellow, white, leek, spring & shallot ( choice and availability mix )
1 tsp. sugar
salt & freshly ground white, black, green and rose peppercorns
Evoo
100 grams of white mushrooms or wild mushrooms of choice and availability
1) pre heat oven broiler ( to toast the hero sub baguettes sliced in 2 )
2) season the filetes of lion
3) sauté the loins in Evoo until desired doneness and drain the oil and the loins on paper towelling
4) sauté the onion varieties in Evoo with a pinch of salt, sugar, and freshly ground peppercorns
5) sauté until caramelized
6) add if desired, the mushrooms washed and dried thoroughly on top of the onions 3/4 sautéed and sauté until golden and tender
7) collocate the sandwiches ( heroes or subs ) with caramelized onions, loins, mushrooms drizzled with onions, salt and freshly ground peppercorns readjusted to ur palate and a drizzle of evoo, balsamic vinegar and if desired, Dijon French Mustard, Green Peppercorns, or mustard of your choice.
Enjoy your Pepito with a glass of red wine or chilled beer.
